Ollie’s Spicy Potato Butter Bean Burgers with Feta

The weekend is upon us and now there is more time to get creative in the kitchen!
 
Ollie’s Spicy Potato Butter Bean Burgers with Feta
Makes 16/18 burgers
Vegetarian, gluten free, with no refined sugar

Ingredients:
 
* 2 cans of organic butter or cannellini beans, drained and mashed
* 400g mashed cooked boiled potato
* 200g of mashed cooked boiled parsnips
* 2 tbsp of organic extra virgin coconut oil
* 8 spring onions,
* 1 clove of garlic, crushed
* 1 tsp true natural goodness ground tarragon,
* 1 handful of fresh coriander finely chopped
* ½ teaspoon true natural goodness Himalayan fine rock salt
* Juice of 1 lemon
* 200g feta cheese, crumbled
* 1 tsp true natural goodness ground cumin
* 1 tsp true natural goodness ground organic turmeric
* 1 tsp true natural goodness ground paprika
* 1 tsp true natural goodness sumac
​Method
 
Put a wok or large pan on a light to medium heat, add 2 tbsp of organic coconut oil and, when heated, add the spring onions, garlic, coriander, cumin, turmeric, paprika, and tarragon. Sauté and stir for about 1 minute. Add the mashed beans, parsnips, and potato to the pan. Stir everything together, remove from the heat and season with the salt. Allow to cool, taste for seasoning, and then drizzle the lemon juice on top. Scatter the crumbled feta and the sumac over the top. Finish with a drizzle of olive oil and mash everything together well with a masher until you have a burger mix. Let the burger mix cool down to room temperature. After washing and drying your hands, use them to mould a handful of burger mix into a not-too-perfect disc, roughly 5cm x 1cm. When you have prepared all the burgers, fry them in batches for about 5 minutes on each side, until they have a nice brown crust. Place between two sheets of kitchen paper to soak up any excess oil.
 
Serving suggestion: hot or warm with salad, poached eggs, in a burger bun or with homemade dip.
