Both beetroot and blueberries boost immune function with their abundance of vitamin C, folate, manganese and other vitamins, minerals and vital antioxidants. Beetroot is used in traditional Chinese medicine to strengthen the blood.
150 grams beetroot, cooked (1 large)
¼ - ¼ teaspoon cayenne pepper
250 ml coconut water
125 grams blueberries
2-3 tablespoons Greek yoghurt
Blend all ingredients together till smooth, pour into a glass and enjoy!

My preference is for freshly cooked beetroot. Vacuum packed is ok, too, but never use pickled beetroot in this recipe. You can also boil up a load of beetroot, freeze in individual zip-lock bags and use as required.
