Whole food plant based triathlete and marathon runner.
I started my journey into health and well-being after the birth of my third son. Always passionate about food and cooking I enrolled with the Happy Pear heart course over 3 years ago and from that moment onwards I adopted a wholefood plant based lifestyle. I competed in my first half marathon aged 41 and decided I wanted to learn more about food and how it could fuel our bodies for optimum performance. I returned to college as a mature student to study exercise and nutrition science. Nutrition is a dynamic field based on clinical studies with constant research improving guidelines to support all adults, active adults and competitive athletes. Sports Nutrition is the foundation for athletic success and impacts on our strength, training, performance and recovery.
Since then I’ve gone on to compete in triathlons, duathlons, aquathlons two half Ironman’s and 2 marathons and am currently training for Dublin City Marathon this October. As an endurance athlete I discovered that a plant based diet not only meets my nutritional needs but also improved my heart health as well as my performance and recovery. A low fat plant based diet can offset many cardiovascular risks along with increasing aerobic capacity and fitness with increased VO2 max leading to better endurance. The performance and recovery benefits provided by a diet rich in fibre, carbohydrates, antioxidant and nutrient rich foods helps to increase blood flow and reduce oxidative stress and inflammation caused by exercise.
I’ve co-hosted health and wellness workshops, giving talks to GAA and Rugby teams, whole food plant based cookery demos and work with people individually to help them achieve their personal goals …..
